2 mirlitons, peeled, cubed1 c sliced zucchini1 c sliced yellow squash1 c sliced red bell pepper1 large onion, chopped4 cloves garlic, minced1 c mushrooms, quartered1 lg tomato, skinned, seeded and chopped2 tbsp olive oil1 tsp salt1 tsp fresh ground black pepper2 tbls fresh basil, chopped1 tbls fresh rosemary, chopped
Heat olive oil in large deep frying pan. add mirlitons, onions and bell peppers. Cook for a few minutes. Add zucchini & squash, cook for a few minutes more. Add garlic, tomatoes, salt & pepper. cook for 10-15 minutes, until veggies start to softened. You don't want them mushy. Add chopped basil and rosemary. Serve.
