Caramel Popcorn

Ingredients
Popcorn kernels (1/4 cup)Canola oil (1 tsp)Salt (0.5 tsp)Butter (2 tsp)Sugar (1/3 cup)Molasses (1 tbsp)Vanilla Extract (1 tbsp)Baking soda (0.5 tsp)
Directions
Take out a tall pan with a lid. Drizzle in canola oil, and put to medium heat. When the oil is hot, add 1/4 cup of popcorn kernels. Cover the pan with a lid. You should hear popping soon. Shake the pan constantly over the heat with the lid on until the popping stops. Pour the popcorn into a bowl, and sprinkle with some of the salt and set aside.

In another small pan, melt butter. Add sugar and molasses and boil for 3 minutes. Add vanilla extract, stir. Immediately add baking soda, and stir again. The mixture will bubble and become lighter in color.

Pour over popcorn and stir until it is all combined. Taste, and add salt as necessary. Makes 2, large 4-cup servings.

Some people like to bake theirs for 45 minutes after in a 375 oven, but I eat it just as it is. Enjoy!
