689 g red potatoes (approx 6 med potatoes)1 small stalk fresh broccoli, chopped2 med celery stalks, chopped1/4 c red onion, chopped1 c fresh spinach, chopped1/2 small red bell pepper, chopped1/4 (1 oz) reduced fat feta1/4 fat free mayo1 T stoneground mustard1 T red wine vinegar1 T lemon juicedillgarlic powderblack pepperthyme
makes 4, 1 cup servings.
cube potatoes and boil until tender
while potatoes are cooking:
chop vegetables and add to large mixing bowl
add feta
when potatoes are done and drained, add to bowl
stir in mayo, mustard, vinegar and lemon juice
blend well
add seasonings and blend again
