Makhlouta - Lebanese Lentils with Dried Beans and Rice

1/4 c. dried lentils1/4 c. dried garbanzo beans1/4 c. dried lima beans1/4 c. dried black beans7-8 c. water1 Tbsp. cumin1 large onion, coarsely chopped2 Tbsp. olive oil1/4 c. brown ricesalt to taste (not included in nutritional information)
Wash all the dried beans and soak them overnight. Drain. Place the beans in a pot with the water and cover. Bring to a boil, add the cumin, reduce the heat, and cook on medium heat. Meanwhile, sauté the onion in the oil. After the beans have cooked on medium heat for 30 minutes, add the rice, onions, and salt. Cook until all of the ingredients are tender, about 20 minutes more.
