Baked Chicken with Feta

Ingredients
2-3 Large Chicken Breasts1/2 Onion1/2 Red Bell Pepper3 Cloves Garlic3 Tbsp Sour Cream1/2 C. Crumbled Feta1 Egg1/2 Cup Panko, seasoned or plain1/2 Tbsp Oregano1/2 Tsbp Garlic Salt1 Tbsp Dried Parsley
Directions
Makes 3 Chicken Breasts

1) Turn oven to 375
2) In a bowl, add the chopped onions, chopped red peppers, and minced garlic. Then, add 3 tbsp sour cream, 1 tbsp dried oregano, and 1/2 c. crumbled feta. Mix well.
3) Cut pockets in each chicken breast; how big depends on how much stuffing you want to put in each piece.
4) Spoon stuffing into the breasts.
5) In a shallow dish, combine Panko and whatever seasonings you like on chicken - I usually add dried parsley and garlic salt. In another dish, crack egg and whisk with a fork until yolk and white are well combined.
6) Pinching the pocket to make sure the stuffing doesn't fall out, dredge each breast first in oil, then panko, until lightly coated.
7) Place each breast on a well oiled baking sheet and bake until panko is golden brown and chicken is white all the way through, around 45 minutes.

Feel free to leave off panko to cut calories and just season well before baking. This brings each breast down to around 365 calories and 5 carbohydrates.
