Wilted spinach salad with bacon and red onion

Ingredients
10 oz spinach6 slices bacon, cooked and chopped chopped2 tbsp extra-virgin olive oil1 red onion, minced2 garlic cloves, minced1 tsp sugar1/2 tsp salt1/2 tsp pepper6 tbsp cider vinegar3 hard boiled eggs, peeled and chopped
Directions
Place spinach in a large bowl.
Save 4 tbsp of bacon grease after the bacon is cooked. Add the extra virgin olive oil and heat until shimmering.
Add the onion, garlic, sugar, salt and pepper. Cook until onion is soft (about 3 minutes).
Take off heat and mix with vinegar and pour immediately over the spinach. Toss to wilt.
Portion onto plates and garnish with bacon and eggs.
