Pineapple Curry Sauce

Ingredients
1 can crushed pineapple in juice1 tsp red pepper flakes1 tsp minced ginger root2 tsp curry powdr1/4 tsp black pepper1/2 tsp cumin2 T brown Sugar (use sweetners of preference)2 T white sugar1/3 Cup vinegar2 T corn starch
Directions
Bring all ingredients to a boil, add cornstarch (mixed with enough water to make a slurry) stir till it turns clear. Blend half of the sauce til smooth and return to the pan. Makes about 3 cups. 1 cup is enough for 4-6 servings of curry when added to diced chicken, vegetables, or shrimp.
