Sweet Pork Tacos with Cilantro Lime Slaw

Cilantro Lime Slaw (can double):1/2 package Cole Slaw mix1/2 cup mayo (I use light)1/2 cup cilantro1 tsp. minced garlic1/4 tsp cayenne pepper1/2 tsp salt1 tbsp lime juice1/2 tsp cuminRoasted Sweet Pork (can double):2-3 pounds pork shoulder10oz can red enchilada sauce10oz dr pepper (I use diet)1 tsp chili powder1/2 tsp cumin1/2 tsp salt1/2 tsp garlic powder (or 1 garlic clove)3/4 cup brown sugar1/4-1/2 onion, chopped1/4 c cilantro, chopped
For Pork: Trim the pork as much as you'd like. Combine all ingredients into a crockpot and cook on low overnight or until meat is tender.
For Slaw: Combine all but slaw in food processor. Mix desired amount of dressing with slaw mix no more than 30 minutes before serving.
Put meat and slaw into a tortilla and eat!
