Savory Stuffed Savoy Cabbage

Ingredients
Savoy Cabbage - 16 leaves1 cup fine dry bread crumbs, plain1/2 cup 2% milk1 lb very lean ground beef (96/4)1 med. red pepper, minced (approx. 1/3 cup)1/4 cup scallions or green onions, minced3 cloves garlic, minced1 large egg1 cup white cooking wine1 tbsp "buttery spread" margarine
Directions
Blanch cabbage leaves in boiling water 3-4 at a time.
Rinse in cold water and dry leaves.
Place bread crumbs in large mixing bowl and stir in milk. Combine beef, pepper, scallions, & garlic with bread crumb mixture. Stir in egg until just combined.
Place a spoonful (1/16th) of meat mixture into cabbage leaf and secure with a toothpick if needed.
Melt buttery spread in large skillet. Add cabbage rolls in a single layer.
Cover and cook on medium for about 5 minutes.
Add cooking wine and cook for another 20 minutes, turning rolls once.

    I really like this recipe. Wrapping the meat can be a little fidgety, but it tasted sooooo good. I also substitute ground turkey for the ground beef. - 3/13/07
