Miso Soup

Ingredients
1/4 block - Tofu, Firm 1/4 package Mixed vegetables, frozen (10oz pk)1 cup - Spinach, fresh1/4 cup chopped onion1 tsp grated fresh ginger2 Tbs white Miso2 oz. uncooked Japanese noodles4 cups water
Directions
cube tofu and put into pan add spinach, onion, ginger, garlic and a little water and heat over high heat. When spinach is wilted, add water and bring to boil - add miso and stir - bring back to boil and add noodles - heat 3 - 5 min or until noodles are cooked. Serve hot.
