Hot or Cold Pasta Salad

Ingredients
2 T sliced almonds6 oz orzo (about 1 cup)2 T Olive oil3 cloves garlic, minced1/8 t ground red pepper1 lb asparagus, trimmed, cooked, and cut diagonally into quarters3/4 tsp salt1 T + 1 t lemon zest1 T lemon juice1/4 cup grated parmesan cheese2 T dried cranberries
Directions
1. Preheat oven to 350 F. Spread almonds on baking sheet coated with cooking spray. Toast 5 to 10 minutes, or until browned. Prepare orzo according to package directions and drain.

2. Heat oil in saucepan over medium-low heat. Add garlic and ground red pepper and cook 3 minutes, or until softened. Add asparagus and heat 2 minutes, or until heated through. Stir in orzo and salt and toss to combine. Remove from heat.

3. Add lemon zest, lemon juice, cheese, and cranberries. Add salt and ground black pepper to taste. Serve hot, at room temperature. or cold. Top with toasted almonds just before serving.
