Deer Valley Turkey Chili

Ingredients
2 cups dried black beans10 cups water1 tsp pepper - (or use canned beans)********1/2 c unsalted butter2 med anaheim chilies, seeded , chopped3/4 c chopped red onion3/4 c chopped celery3/4 c chopped red pepper1 large leek - chopped white only3 garlic cloves2 tsp oregano fried & crumbled**********1/4 cup corn flour (we used corn meal in grinder)1 tsp cayenne2-1/2 Tb ground cumin2 Tb ground coriander1 tsp salt**********1/8 c sugar4-1/2 cup chicken broth2-1/4 cup frozen corn, thawed4 cups chopped turkey or chicken***************Toppings: grated cheddar cheese, red onion, sour cream, fresh cilantro.
Directions
Makes 8 servings.

Cook veggies in butter about 10 min. Add spices & corn meal-flour, cook 5 min. Add the sugar and 4 cups broth - bring to simmer. Puree 1-1/4 cup corn with the remaining 1/2 cup stock. Add to chili. Add 2 cups of cooked black beans, 4 cups of chicken, and remaining cor. Simmer 25 min.
