Salmon Patties with Spinach

1 can salmon , drained (14.75 oz)3 egg whites, lightly beaten1 tablespoon light mayo1/2 cup panko bread crumbs1/3 cup finely diced celery1/4 cup finely diced onion2 teaspoons grapeseed or olive oil1 cup frozen chopped spinach, thawed1/4 teaspoon dried rosemary1/2 teaspoon paprikasalt & pepper, to tastea few squirts of lemon juice
Saute celery and onions in oil until tender. Squeeze liquid from spinach and chop finely. Drain salmon; remove skin and bones if desired. Mix all ingredients together in large bowl. Use 1/3 measuring cup to portion. Pat lightly to shape. Spray heavy skillet and allow to get hot before adding patties. Cook for four minutes per side on medium heat or until nicely browned. Makes about 7 patties.
