Veggie Quiche Cups - South Beach variation

Ingredients
1/2 cup Egg Substitute2 whole eggspackage frozen spinach1/3 cup diced red bell pepper1/3 cup mushrooms1 oz low fat shredded cheesedash of pepper sauce
Directions
Heat oven to 350. Thaw spinach in microwave for 2.5 minutes. Wisk egg substitute and eggs, add veggies, and pepper sauce to taste. Spray muffin pan with non stick. Pour mixture into cups, top with cheese. Bake for 20 mins or until toothpick comes out clean.

Makes 6 servings with 2 cups per serving.
