Quinoa Tabouleh

Ingredients
1 cup dry quinoa1/4 cup olive oil1/2 cup lemon juice2 cloves garlic. minced2 tbsp fresh mint1 cup choped parsley1/2 cup chopped scallions
Directions
Cook quinoa in 2 cups boiling water until liquid is absorbed. Fluff and let sit for 15 min then add other ingredients. Refridgerate for an hour.
