apple scramblecakes with honey PB yogurt sauce

for the apple cake thing:-2 T unsweetened applesauce-1/4 apple finely diced-1 T quick oats or rolled oats-1 T flaxmeal-1 T unsweetened coconut flakes-1 T raisins-1 1/2 t pumpkin seeds-cinnamon to taste-pinch of saltfor yogurt sauce:-1 t honey-1 t organic PB smooth-1 T nonfat greek yogurt-cinnamon to taste
makes one serving
mix all ingredients for apple scramble and place blob into oil/cooking sprayed pan on medium low. form into a pancake shape with spatula. it will be gooey! flip a few times and cook until it starts to brown. you'll probably have to reshape it each time you turn it....it's not really a pancake so much as a scrambley thing.
top with yogurt sauce
yogurt sauce:
melt peanut butter and honey in microwave. mix in yogurt and cinnamon. that's it!
