Curried Artichoke Shrimp Salad

Ingredients
4 cups brown rice, already prepared1 6oz jar marinated artichoke hearts1/2 lb. cooked salad shrimp2 green onions, chopped8 ripe olives, slicedLemon slices, parsleyDRESSING:Marinade from artichokes and mayonnaise, mixed together to equal 1/3 cup1/2 t. curry powder
Directions
Rice should be cooled. Drain artichoke hearts (reserving marinade for dressing), chop, and mix with shrimp, green onion, and olives into rice. Make the dressing with about equal parts marinade and mayonnaise to equal 1/3 cup, and blend in curry powder. Refrigerate overnight and garnish with lemon slices and parsley. Makes 12 - 1/2 cup servings
