Chicken Parm

Ingredients
Olive Oil, .25 cup Onions, raw, 1 cup, chopped Garlic, 2 clove *Del Monte italian style Petite Cut Diced Tomatoes, 3 cup Salt, .5 tsp 4 Chicken Breast, boneless, skinless, 5 oz each Parmesan Cheese, grated, 1/3 cup Egg, fresh, 1 large Mozzarella Cheese, whole milk, 4 oz Parmesan Cheese, grated, 2 tbsp chicken broth approx. 1 cup
Directions
Makes 4 servings

Heat to boiling tomatoes, garlic, onions together with a little chicken broth simmeruntil thick.

flatten chicken to about 1/4"
add 1/3 cup parmesan cheese to the breadcrumbs
dip chicken in beaten egg then in crumb mixture
Heat remaining oil in frying pan and 10-15 min turning once. pour sauce around chicken, sprinkle mozzarella over chicken and cover till melted, sprinkle 2 tbl of parm cheese over top just before serving.
