2 large cans (100 fl oz) diced Plum Tomatoes - no salt added2 large cans (106 fl oz) Italian Plum Tomoatoes - peeled with basil . 1 13 fl oz can Tomato Paste10 onions - raw, and chopped 1/2 c sugar6 TBSP basil (dried)1 1/3 TB parsley2 2/3 Tbsp kosher salt10.5 Tbsp oregano (dried)10 Tbsp minced garlic2 tbsp olive oil
run whole tomatoes thru food processor until smooth, set aside.
In large stock pot, add EVOO, garlic and onion, cook until onion is soft. Add the rest of the spices, then all the tomatoes and paste. Bring to a boil - then reduce heat and simmer for 30 min.
Makes: 50cups, nutritional info is for 1 cup servings
To spice it up - add 1-2 tsp red pepper chili flakes.
