Baked Corn Flakes breaded Chicken Breast

Chicken breasts, thawed, halved, boneless, skinless2 eggs2 cups Kellogs Corn Flake Crumbs10 secs Pam spray oil, originalGarlic powder, onion powder, salt and pepper to taste
I like to open the chicken breast halves in butterfly shape and pound them a little so they are flat. That way they take less baking time and the crumbs stick evenly, but that also adds prep time.
In a rectangular or oval bowl a little larger than the size of the chicken breast half, whisk the eggs with the seasonings.
In another rectangular or oval bowl a little larger than the size of the chicken breast half, cover the bottom with a layer about 1 cm thick of spread corn flake crumbs.
Dip one chicken breast half at a time in the egg mixture.
Transfer to crumbs bowl and pat down.
Sprinkle more crumbs on top until it's covered.
Turn and pat down.
Repeat until chicken breast is nicely covered.
Transfer to a baking sheet sprayed with Pam
Once all chicken breast halves are on the baking sheet, spray Pam on them until they all have an even, thin layer of Pam, about 5 seconds in total.
Bake at 180F for 10 minutes
Turn over, spray with Pam for 5 seconds so all chicken breasts are covered
Bake 10 more minutes
Enjoy.

Thanks for your rating. Yes, I love it too. It's actually my former mother-in-law's recipe, but she used to pan-fry the chicken breasts whereas I have learned that it is healthier if you bake them.
