Pampered Chef Family Burrito Bake

Ingredients
1 medium onion2 lbs lean ground beef4 tbsp taco seasoning mix, low sodium1 can Del Monte fiesta corn1 small jar chunky salsa1 can no fat refried beans3 tbsp water7 16 in corn tortillas2 cups shredded colby and monterey jack cheese, divided
Directions
Brown ground beef. Add onions and taco seasoning mix. Add corn and 1 cup of salsa. Mix well. In a small bowl, combine refried beans and water - blend until well mixed. To assemble, place two tortillas in bottom of deep covered baker (if you don't have one, use small covered casserole dish or dutch oven). Cut one tortilla to cover any gaps. Spread one-third of beans evenly over tortillas. Cover with one-third of the beef mixture, and then one-third of the cheese. Repeat layers one time. Arrange remaining tortillas over cheese. Top with remaining beef and beans. Microwave, covered, on high for 12-15 minutes or until center is hot (can be cooked in a preheated oven at 350 degrees for 50-55 minutes). Top with salsa and remaining cheese. Re-cover, let stand for 10 minutes.
