Ingredients
2 cans(or frozen) mixed vegetables2 cans cream of chicken soup1 pkg. Chicken breast2 cups water
Directions
Boil chicken breast and cut into cubes. Heat water and soup until boiling. Add vegetables; cook until tender. Add chicken last, heat until hot.

Awesome served with mexican cornbread!

    I too make something simular. We call it chicken over rice. I use the 2 cans of soup (98% fat free) , 2 cans milk (non-fat), 2 tablespoons mustard, and creole seasoning to taste. I serve the vegetables on the side. - 10/17/07
