Busy Night Dinner

Ingredients
Fresh Spinach, 1 10oz packageLean ground beef, 2 poundsShredded Mozzarella cheese, 4 ozDiced tomato with Italian Seasonings, 1 canWhole Wheat rotini, 8 ozWater, 3 cups
Directions
Brown hamburger and drain.
Add 3 cups of water and 8 ounces of pasta to pan. Bring to boil. When pasta is mostly cooked add spinach in small handfuls until entire bag is incorporated into pasta. Add can of diced tomato and ground beef. Stir well. Simmer 5 minutes. Sprinkle with mozzarella cheese. Cover and let cheese melt (about 2 min). Serve hot.
Approximately 3/4 cup servings
It easily fed our family of five with enough for leftovers for lunch!
