Vegetarian Mushroom & Bean Soup

Ingredients
2 tbls. Canola Oil1 medium onion, thinly sliced1 clove garlicMorningstar Farms "Bacon" strips (2) - Diced3 stalks celery, chopped400 g. Mushrooms (any mix - I like Portabello and Crimini)bay leaf8 c. waterSalt & Pepper to taste1 can Navy Beans (14oz.), drained and rinsed4 cups fresh or frozen spinach
Directions
Brown onions, "bacon," celery and garlic in canola oil in large soup pot. Continue to brown until onions are carmelized (caramel brown, sweet and wilted). Add mushrooms and saute until mushrooms release their liquids.
Add water, salt, pepper and bay leaf. Simmer for 10 minutes. Add beans to heat through. Throw in spinach right before serving.

Serve over brown rice if desired (not included in nutritional info).

Yields 6 hearty portions (approx. 2c. each)

    This is pretty good, but is pretty weak in the flavor department. I think I'll try this again, but use vegetarian broth instead of water, and maybe add some more "bacon" for a smokier flavor. - 12/20/17
