3 cups cooked rice (good for using up leftovers)2 tablespoons canola oil2 tablespoons chopped oil2 eggs, well beaten2 ounces (about 1/2 cup) cooked and cubed chicken1 tablespoon soy sauce
Heat a frying pan over high heat and add the oil.
Cook the onions for a few seconds.
Add eggs and cook another few seconds.
Add rice, chicken and soy sauce and stir for about 3 minutes.
Can substitute ham or small shrimp for the chicken, but it will change the calories.
Serving Size: Makes 4 almost a cup sized servings
