Mama Pea's Cheesy Dijon Pasta Bake

Ingredients
Healthy Harvest Rotini, 13.25 oz Red Star, Nutritional Yeast, Vegetarian Support Formula, 1.5 Tbspn *Hummus Original (Private Selection), 8 Tbspn*Lemon Juice, .0938 cup (1.5 T)Annie's Naturals Organic Dijon Mustard, 1 tsp, 1 serving Garlic, 1 tsp Kroger Lite Soy Sauce, .5 tbsp Saltine Crackers (Saltines), .5 cup, crushed
Directions
Preheat oven to 350 degrees.
Prepare pasta according to package directions.
In a small bowl, whisk together hummus, lemon juice, nutritional yeast, mustard, garlic and soy sauce.
Add pasta water directly from pot to sauce and mix.
When pasta is finished, drain and return to pot.
Add sauce and stir until pasta is covered. Add salt and pepper to taste.Prepare 4 baking ramekins or a 1 qt. baking dish with a light brush of oil or spritz of cooking spray.
Place pasta in dishes and top with cracker crumbs.
and bake for 15-18 minutes. Broil for an additional 1-2 minutes, or until cracker topping is browned.
