Miracle Soup

Ingredients
1 TBSP Olive Oil1/4 cup chopped garlic2 (32oz) fat free chicken broth1 6oz can mushrooms drained1 6oz can bamboo shoots drained1/2 cup soy sauce1/4 cup rice wine vinegar1 tsp crushed red pepper or red pepper flakes2 (16 oz) packages of frozen mixed stir fry vegetables1 pound frozen peeled & deveined shrimp14 cup chopped fresh cilantro1 bunch of fresh bok-choy or spinach
Directions
1. Boil Chicken broth
2. In a large pot, heat oil over medium heat. Stir in garlic & cook until tender.
3. Add oil, garlic and remaining ingredients to chicken broth and bring to a boil.
4. Boil until bock-choy/spinach is tender.
5. Add shrimp & reduce heat to simmer until shrimp is ready.
