Chicken Satay

Ingredients
Marinade:6 cloves garlic, pressed4 Tbsp ginger root, grated4 Tbsp apple cider vinegar4 green onions, thinly sliced1/2 cup cilantro, chopped1 cup low sodium chicken broth4 Tbsp all natural creamy peanut butter (no added oils)1/2 cup Hoisin sauce1/2 cup low sodium soy sauce4 Tbsp honey2 tsp crushed red pepper flakes (more if you like it spicier)Chicken breastsBamboo skewers
Directions
Combine all the ingredients except chicken in a bowl, mix well. Divide in half: reserve one half in the refrigerator until needed for a dipping sauce, the other half place in a large container and add the chicken chunks (make sure there is enough marinade to completely cover the chicken.

Marinate overnight.

Soak the skewers for an hour before cooking.

Add the chicken on the skewers (toss marinade chicken was soaking in) and cook on the grill until done. Heat the reserved marinade to dip the chicken in.

Serving Size: can make any where between 2 servings and 12 servings.
