Citrus Ambrosia Salad

1/2 C unsweetened coconut flakes1 large orange1 large pink grapefruit1/4 lime juice1/4 tsp salt1/8 tsp ground black pepper3 T olive oil6 C mixed baby greens
Toast coconut flakes. Preheat oven to 350. Place coconut on a cookie sheet and toast in oven 3 minutes or until golden. Coconut can burn easily, so check after a couple minutes.
Separate orange and grapefruit into bite-sized segments, reserving juice that occurs while separating. Mix this juice with the lime juice and put in a large bowl.
Add salt and pepper to the juice mixture, and then add oil and whisk until blended. Add greens to this dressing, and toss to coat. Arrange the greens on 8 salad plates, and top with citrus segments and toasted coconut flakes.
