Goma's Oyster Stew

Ingredients
1/2 cup flour1/2 cup Parkay cholesterol free butter-53% vegetable oil1 Tbsp salt--I use NoSalt, a salt substitute1 Tbsp pepper4 cups non-fat milk--I make mine with powdered and the water from cooking the veggies4 medium potatoes, cut up with skins on1 medium onion, chopped4 celery stalks, chopped1 can oysters
Directions
Put oysters (with juice), potatoes, onion, & celery in a large pot of boiling water. Cook until potatoes are tender, about 20 minutes.
While Melt the butter with salt & pepper in a large sauce pan. Stir in flour & cook into a ball. Slowly add milk, stirring as it thickens, cook 1 minute.
When vegetables are done, drain and add milk mixture. Simmer on low till you're ready to serve.
Makes 8 delicious servings.
