Crunchy Apple Slaw

Ingredients
1 cup light mayo or vegan mayo1 TBS curry powder1/4 medium head of green cabbage(shredded)1/4 medium head of napa cabbage(shredded)1 medium zucchini or other summer squash, shredded or grated1 large carrot, grated2 stalkds celery, finely chopped2 green onions, sliced thinly2 green or Granny Smith apples, small cubes1 cup roasted peanuts, finely chopped
Directions
Mix mayo and curry power in LARGE bowl until well-blended.
Add all remaining ingredients EXCEPT PEANUTS.
Toss and toss to coat all with may mixture.
(I usually do the coating in two batches).
Cover and chill.
Add peanuts just before serving.

This recipe makes 16 1/2 cup servings.
