agassifan healthy apple pear butternut soup (crockpot)

Ingredients
butternut squash, (2 lbs) peeled and diced4 apples, cored and chopped1 asian pear, cored and chopped1 medium onion, peeled and chopped4 C low sodium chicken stock1/2 tbsp curry powder1/2 tbsp ground ginger 1 tsp cinnamon1/2 tsp pepper2 tbsp olive oil
Directions
Put all the ingredients in the crockpot and turn on high for 5-6 hours.

When ingredients are soft, puree with a stick blender, right in your crockpot, OR use your blender, but be careful when blending hot ingredients...work in small batches and cover blender lid with a kitchen towel (before blending) to prevent getting scalded.
