Nappa Cabbage Salad

Ingredients
1 head nappa cabbage, split lengthwise, sliced/shredded very thinly1 green onion, diced1 red peppers, diced1 cup sliced almonds, toasted1 chicken flavored package ramen noodles1/2 cup canola oil6 TBS vinegar (basalmic, red wine, white, etc.)3 TBS sugar or substitute
Directions
Slice/shred nappa cabbage and place in large flat (2 inch) salad bowl, add green onions and red pepper.

Combine ramen noodles and almonds and set aside.

Dressing: Combine oil, vinegar, sugar (substitute) and flavor packet from ramen noodles.

Just before serving combine 'salad,' noodles/almonds and dressing.
