Stir Fried Rice

2 teaspoons canola oil1 large onion, diced4 cloves garlic, minced2 eggs, beaten2 cups cooked long or short grain brown rice1 cup frozen peas1 cup carrots, diced3 tablespoons low sodium soy sauce1 tablespoon Thai style chili sauce1/2 cup cashews, chopped
Heat a medum frying pan over medium heat. Add the oil and onion and saute for 3 minutes or until onion is just cooked through. Add the garlic and the eggs. Stir until eggs are cooked through. Make sure to break the eggs into smaller pieces.
Add rice, vegetables, soy sauce and chili sauce. Stir well.
Cover and reduce the heat to low. Cook for 5 minutes or until the vegetables are heated through.
Sprinkle with cashews and serve.
