Caribbean Slaw

Ingredients
Bok Choy, About 4 Cups, shredded (about 1 1/2 heads)Peppers, sweet, red, fresh, 1 medium, sliced thinlyRed Onions, raw, .1/2 large, sliced thinlyCarrots, raw, 2 medium, shreddedMangos, 1, peeled, seeded and dicedCilantro, about 1/4 Cup, choppedGreek Yogurt, Plain, 1/3 Cup Fat Free Mayonnaise , 2 tbspYellow Mustard,1 TbspCider Vinegar, 3 tbsp *Guava Nectar, .25 cup Hot Pepper Sauce, 2 tsp Salt and Pepper to taste
Directions
Toss the cabbage, red bell pepper, red onion, carrots, mango and cilantro together in a large bowl. Whisk together the yogurt, Mayo, mustard, vinegar, nectar, salt, pepper and hot sauce and pour over the cabbage mixture and toss to coat. Allow the slaw to cool in the refrigerator for at least an hour before serving.
