Healthy Chicken Crockpot Stew

Ingredients
Ingredients: * Celery, raw, 3 stalk, medium (7-1/2" - 8" long) * Sweet potato, 1 sweet potato, 5" long * Artichokes, frozen, 1 package (9 oz) * Mushrooms, fresh, 1 cup, pieces or slices * Amy's Kitchen, Organic Cream of Mushroom Soup, 3/4 cup, 1 serving * Chickpeas (garbanzo beans), 1 cup * Broccoli, fresh, 1 cup, chopped *Chicken Broth (Pacific Organic Free Range Low Sodium), 1 cup * Chicken Breasts, boneless, skinless, 24 ounces * onion, red - raw 1/4 cup, 1 serving * Garlic powder, 1 tbsp * Pepper, black, 1 tbsp *Salt - Iodized Sea Salt, .5 tsp *Fajita Seasoning, .5 tbsp *Water, Filtered, 3 cup
Directions
Chop fresh veggies into bite-size pieces and thaw frozen artichokes. Drain can of beans.

Put all ingredients except broth, water and spices in crockpot, with mushroom soup on bottom and chicken on top.

Season with garlic powder, fajita seasoning, salt and pepper.

Pour broth and water over top of all ingredients.

Cook on low 8 hours or high 4 hours.

Add more seasonings to taste.

Makes 6 big bowls -- about 2 cups each. Great to serve with a dollop of low-fat sour cream or plain yogurt.
