Healthier Old-Fashioned Oatmeal Cookies

3 cups quick-cooking oats2 cups packed brown sugar1 cup virgin coconut oil2 eggs1 tsp. baking soda1 tsp. cinnamon1/2 tsp. sea salt2 tsp. vanilla1-3/4 cups unbleached white whole wheat flour1-1/2 cups raisins
1. Heat oven to 375 degrees.
2. In large mixer bowl combine all ingredients EXCEPT flour and raisins. Beat at low speed until well mixed.
3. Add flour and continue beating until well mixed.
4. Stir in raisins by hand.
5. Roll into teaspoon-size balls and space 1" apart on cookie sheet. Flatten balls slightly with the palm of your hand.
6. Bake 8-10 minutes.
Serving Size: Makes 70 servings.
