Spicy Tomato-Seafood Stew

2 T olive oil6 cloves garlic, chopped2 cans no salt added stewed tomatoes1/2 t salt1 t crushed red pepper flakes16 oz shrimp16 oz scallops1 cup okra, sliced (if desired)1 T fresh or dried parsley
Saute chopped garlic in large pan in 1 T olive oil over medium-high heat. When garlic starts to sizzle, add tomatoes, salt and pepper. Bring to boil, then lower heat, add okra (optional) and simmer for 30 minutes. In a separate pan, cook shrimp and scallops in 1 T olive oil over medium-high heat for about 2 minutes, or until shrimp turns pink. Transfer seafood into tomato mixture. Add parsley and heat for a few minutes more to blend flavors.
Those seeking more carbs can serve over pasta or rice or with crusty bread. Otherwise, it's great on it's own, served with a salad.
