Chocolate Chip Meringues

2 egg whites, at room temperature1/8 tsp. cream of tartar1/4 tsp. vanilla extract 1/2 c. sugar1/2 c. Ghiradelli 60% Cacao Chocolate Chips, chopped
Beat egg whites until frothy; add cream of tartar and vanilla. Continue beating, adding sugar a little at a time, until stiff peaks form. Fold in chocolate chips. Drop by tablespoonfuls (I use a medium-size muffin scoop) onto foil-lined cookie sheets. Bake at 325F for about 15 minutes or until lightly browned. Turn off oven and allow meringues to cool inside with door left ajar.
Note: You may choose to substitute peppermint extract to create a chocolate-mint flavor.
