Cut up all vegetables, spray pan with low fat cooking spray and cook on medium heat for 5-7 mins to soften them up and release the flavor.
Add the eggs, continuing to cook on medium heat breaking up the food items in a scrambled egg style of cooking.
Separate the soft tortilla shells and distribute the finished eggs evenly between the 6 shells, wrap them up for later.
