Oil, 2 tbspGinger, 2 tsp (shredded)Garlic, 1 tsp (minced or shredded)Tomatoes, 1 medium sized (chopped)Paprika, 2 tspMoong daal, 64 grams (about 1/2 cup)Water, 2 1/2 cupsSalt, to tasteturmeric ( 1/4 tsp; optional)
Wash the daal a few times until the water runs clear. Cook daal, water, and salt (and turmeric if you want) in an uncovered pot for about 20-30 minutes or until its the consistency you like. When the daal is almost done cooking, heat oil in a separate pan. Saute ginger and garlic for about a minute, stirring occasionally. Add in the tomatoes, salt, and paprika. Cook for five minutes then add to daal. Squeeze in fresh lemon juice, stir, and enjoy!
** When cooking the daal, try to use a tall pot because it tends to get really foamy.
