Drew's Healthy Vegan Cookies

1/4 cup Coconut Oil, slightly warm3 Large Ripe Bananas (~ 1.5 cups mashed)1 tsp Vanilla Extract1/3 cup Shredded Coconut1/3 cup Flax Seed Meal2 cups Rolled Oats1 tsp Ground Cinnamon.5 tsp Sea Salt, Fine1 tsp Baking Powder6-7 oz. Carob Bar or Chips
Preheat oven to 350 degrees.
Combine coconut oil, bananas, and vanilla in a bowl, then set aside. In another large bowl, mix together oats, flax seed meal, coconut, cinnamon, sea salt, and baking powder. Add liquid ingredients to the dry ingredients, stirring until combined. Fold in carob chips. Place small scoops of dough (2-3 teaspoons in size) on a parchment paper-lined pan (I use a Silpat). Bake for 13-14 minutes, or until cookies are fully set.
*Note: The dough's consistency is slightly looser than regular cookie dough.
Serving Size: Makes about 3 dozen small cookies.
