!/.2 head of cabbage, chopped1 cup chopped carrots1 small zuchinni, chopped1/4 medium diced onion1/4 diced red pepper1tbsp cider vinegar 1 cup of water1 tbsp chilli oil, or tabasco to taste-3 slices cotto salami, may subsistute a can of chili beans to make vegetarian
put cabbage in a large pan with the vingar, water and oil. Turn the heat up med/high and let it steam while you prep the other ingredients. Mix in remaining items and turn the heat down. simmer for approx. 20 minutes. I was originally going to add whole grain pasta and cream of mushroom soup, but it didn't need it!
