4 (6-oz) salmon filets1/4 cup pineapple juice2 T. lemon juice2 T. brown sugar4 t. chili powder2 t. grated lemon find3/4 t. ground cumin1/2 t. salt1/4 t. ground cinnamon Cooking sprayLemon slices (optional)
Combine pineapple juice, lemon juice and salmon and marinate in fridge for 1 hour, covered. Discard marinade. Combine sugar & next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish, place in 11X7-inch pan coated with cooking spray. Bake at 400 degrees for 12 minutes or 'til fish flakes easily. Serve with lemon slices if desired.
