Scott's Venus deMilo soup

3 tbsp. olive oil1 medium onion - diced3 stalks celery - sliced1 or 2 cloves garlic - minced3/4 tsp. salt1/2 tsp. ground pepper1 lb. 85% lean ground beef1 lb. frozen mixed vegetables1 15 oz. can diced tomatoes3 tbsp. beef flavored soup base2 bay leaves48 oz. water 1 cup orzo
Heat olive oil in a soup pot over medium heat. Add onion, celery salt and pepper. Reduce heat and sweat while stirring until translucent. Add garlic and stir until you smell the garlic. Don't overcook the garlic! Break up the hamburg into the pot and cook, stirring occasionally, until no longer red. Add the tomatoes and mixed vegetables. Stir together. Add water, soup base and bay leaves. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes. Add orzo and stir occasionally to prevent sticking. Cook 10-12 more minutes. Remove bay leaves. Makes 8 12-oz. servings.
