egg white omlet (3 egg whites, one whole egg) with spinach and mushroom

Ingredients
1 small onion finely chopped2-3 small cloves of gralic minced or pressed3 egg whites1 large egg1 small bag of fresh spinach4 mini portabella mushrooms 1 tsp olive oil divided1 tsp of low sodium chicken broth1 tps of desire cheese (optional)
Directions
Heat 1/2 tsp of oil in saute pan and add onions and garlic. Saute until onions translucent and then add mushrooms and spinach. Saute until desired texture, set aside. Whip egg and chicken broth until blended, and heat 1/2 tsp of olive oil. Pour egg mixture in pan and let cook a few seconds. Take spatula and move egg mixture around in the center to prevent undercooking when flipped. Cook about 30sec to 1 min, depending on desired doneness. Flip omlet over and repeat cooking. Place on plate, place spinach mixture on half the omlet, and flip other half over, making a half moon shape. Sprinkle cheese on top. Enjoy!
