1 lb chicken breast2 tbsp olive oil1/2 red onion1 clove garlic1 cup sliced mushrooms1/2 cup red wine1/2 cup reduced fat sour cream1 cup chicken broth2 tsp Worcedstershire SauceSalt and Pepper
Cut chicken breasts into small cubes
Finely chop onion and garlic
Heat olive oil in large skillet.
Add chicken and saute until fully cooked
Add onion, garlic and mushrooms and until vegetables are softened.
Add wine and simmer 1 minute
In a bowl, mix broth, sour cream and Worcestershire sauce
Add mixture to pan and bring to a simmer for several minutes
Season to taste with salt and black pepper
Serving Size: Makes 2 servings
