Vegetarian Lentil Barley Soup

1 lb. lentils10 cups water1 qt. canned tomatoes1 cup barley1 cup chopped onion1 cup diced celery1 cup diced carrots1/3 cup canola oil1 tbsp. parsley1 env. dry onion soup mix1 (10 oz. ) pkg. frozen chopped spinach
Rinse lentils and remove any debris. Place in crockpot with water, tomatoes, onion soup mix, and parsley. Saute the onion, celery and carrot in oil. Add to crockpot. Add frozen spinach. Cook on low for 6 hours or until tender.
