Blue cheese stuffed Pork

Directions
Take the boneless pork loin and slice it lengthwise in the middle without cutting clear through the roast. Open the roast and spread the blue cheese or garganzola cheese, shallots,thyme and walnuts on the pork loin fold the roast back together and tie it together. Rub roast with oil and salt and pepper.
Place the roast on and open pan and roast in a 325 degree oven for 25 min. per pound. (or until roast registers 160 degrees on a meat thermometer) Let rest on counter for 10 minutes and slice and enjoy.
