Southern Chicken Bites

Ingredients
2 cups shredded coconut1 egg2 tablespoons milk3/4 lb. boneless, skinless chicken breast1/2 cup all-purpose flour1 teaspoon celery salt1/2 teaspoon garlic powder1/2 teaspoon ground cumin
Directions
- Cut chicken into 1/2-3/4 in. pieces
- Blend coconut until finely chopped, set aside
- In seperate bowl, combine milk and egg
- Toss chicken with flour, dip in egg, then coconut
- Place chicken on a baking sheet and refridgerate for 30 minutes
- In electric skillet (deep fat fryer will work), heat oil to 375
- Fry chicken, 3-5 pieces at a time for 2 minutes on each side, or until golden brown
- Drain on paper towels
- Sprinkle with cumin, celery salt and galic powder

Yields: 12 servings; serving size- 3 pieces
